Wash and dry all produce. Preheat #oven{} broiler to high. Bring a #large pot{} of salted water to a boil. Halve, peel, and dice @yellow onion{1%unit}. Mince @garlic{2%cloves}. Finely chop @basil{½%cup}.

Heat a large drizzle of @olive oil{1%tbsp} in a #tall-sided pan{} over medium-high heat. Add yellow onion and garlic, and toss until softened ~{4%minutes}. Season with @salt{1%pinch} and @black pepper{1%pinch}.

Add @ground beef{8%oz} and break up into pieces until browned ~{3%minutes}. Season with salt and pepper. Add @crushed tomatoes{1%cup}, basil, and @water{1%cup}. Stir and reduce to a low simmer until thickened ~{4%minutes}. Season generously with salt and pepper.

Add @cheese tortelloni{8%oz} to boiling water. Cook until tender ~{3%minutes}. Meanwhile, combine @panko breadcrumbs{½%cup}, @parmesan cheese{¼%cup}, a large drizzle of olive oil, and a pinch of salt and pepper in a #small bowl{}.

Remove tortellini from water with a slotted spoon, and incorporate into Bolognese with @spinach{2%cups} and @sour cream{2%tbsp}. Stir gently until spinach wilts. If your pan is not ovenproof, transfer mixture to a #baking dish{}.

Sprinkle panko breadcrumbs over tortellini, and broil until browned ~{2%minutes}. Serve right out of pan and enjoy!
